And Here's the Recipe...

As requested, here is our secret recipe for ratatouille! There's not much of a secret, really -- it's a peasant dish. We found a simple online recipe and jazzed it up. Here's how we did it:

1. Start potato cubes (about 1 inch squared) boiling.

2. In a separate pan, sautee onions, sausage, and stewed tomatoes (we liked the Italian style). Add seasonings to taste (we used Italian seasoning, salt, and pepper). We also added a bit of ketchup to this mixture as well.

3. In yet another pan (large skillet), combine thinly sliced carrots, yellow squash, zucchini and tomatoes. We recommend adding the carrots first, as they take longer to cook (a touch of olive oil helped with the carrots). Add salt, pepper, and Italian seasoning.

Plating is as easy as 1, 2, 3: potatoes, sausage mix, then veggies (haystack style). Ketchup also adds a nice zing. Enjoy!
